Abstract
The protein content in mature human milk from Swedish well nourished mothers determined by amino acid analysis was found to be 0.88% (w/v). Fat content was determined to 3.0%, lactose 7.2% and total solids 11.4%. The major whey proteins: lactoferrin, α lactalbumin, serum albumin and lysozyme were quantitated. The determination of casein by acid precipitation was evaluated. Of the total nitrogen content 25% was found to be non protein nitrogen.
